RESUMO GERAL
Introduction. The atemoya (Annona cherimoya Mill x Annona squamosa L.) is a annonacea, and nowadays is the fruit of this family more commercialized and consumed in the country. However it is a seasonal fruit and its high perishability limits its sell, which makes it necessary to use conservation techniques or processing to extend the time to market. The dehydration by lyophilization aims at obtaining a stable product without losing the characteristics of fresh fruit.
